Manja Rai (କଦଳୀ ମଞ୍ଜା ରାଇ), also known as Kadali Manja Rai or Kadali Manja Besara, is a traditional Odia dish made from the inner stem of the banana plant (Manja) cooked in a flavorful mustard paste. This dish is valued for its unique taste, texture, and health benefits, including high fiber content, potassium, and antioxidants, aiding digestion and detoxification.

Ingredients :

For the curry 
Banana stem (Manja)
Potato, arbi (saaru) and Brinjal
Mustard oil
Panch phoran ( jeera, mustard, fenugreek, fennel seeds ), green chilies, dry red chili, and curry leaves
Turmeric powder
Badi (sun-dried lentil dumplings)
Grated coconut (optional)
Coriander leaves
Salt and Water 
For the mustard paste 
Mustard seeds, Cumin seeds
Dry red chilies, Garlic cloves
Tomato 

Preparation :

1.Prepare the banana stem
Wash and cut the banana stem, removing the threads. Cube the pieces and mix with salt and turmeric, then squeeze out excess water.

2.Prepare other vegetables
Peel and dice the potato, colocasia, and brinjal.
Prepare mustard paste: Grind the soaked mustard seeds, cumin seeds, dry red chilies, garlic, and tomato into a paste.

3.Temper:
 Heat mustard oil and add panch phoran, chilies, and curry leaves.
Cook vegetables: Add the prepared vegetables and banana stem, frying lightly. Add turmeric and salt.

4.Add mustard paste:
Mix in the mustard paste, adding water as needed.

5.Simmer:
 Cover and cook on low heat until the vegetables are tender.

6.Final touches
Add fried badi and grated coconut (if used).

Garnish with coriander leaves and serve with rice.
