Varwa Karela – Odisha’s favorite bitter gourd 

Ingridients:
 
* 2 medium karelas (bitter gourd)
* 1/2 cup mustard oil
* 1/2 tsp mustard seeds
* 1/4 tsp cumin seeds
* 1/2 tsp turmeric powder
* Salt to taste
* 2 medium boiled potatoes, mashed
* 1 medium tomato, finely chopped
* 1 medium onion, finely chopped 
* 1/2 tsp cumin powder
* 1/2 tsp coriander powder
* 1-2 green chilies, chopped 

Preparation Steps for Stuffed Karela:

1. Scoop karela or bitter gourd seeds out.
2. Rub salt, keep aside 30 mins. OR Steamed     for 10 mins. Let it cool down
3. Squeeze out excess water.
       Preparation for stuffing or filling 

4. Heat oil, add mustard seeds, cumin seeds.
5. Add boiled mashed potatoes, finely  chopped tomato, onion, green chilies, cumin    powder, coriander powder, Salt to taste,turmeric powder.
 6. Mix well and cook for 5min. In low flame.
  Filling
7. Fill the bitter gourd with Varwa mix.
8. Heat oil in a pan then Add bitter gourd cook shallow fry till it little bit golden (5 to 7 min.)
